WasteLess – Digital Food Waste Monitoring for Sustainable Hospitality

The project brings together:
  • Eurotas Hotels,
  • the Faculty of Tourism Studies – Turistica, University of Primorska,
  • the Austrian fine-dining restaurant Esszimmer.

  • WasteLess is a collaborative project developed within the framework of the European TASTE Call initiative. The project focuses on reducing food waste in hospitality through the implementation of digital monitoring solutions and data-driven decision-making.

Together, the partners are developing and testing practical solutions that help hospitality businesses better understand, measure and reduce food waste.

As part of the project, digital food waste monitoring systems have been installed at pilot locations, enabling the collection, storage and analysis of food waste data. The system supports hospitality staff in identifying waste patterns, improving operational efficiency and implementing targeted measures to reduce food losses.

In addition to the technical implementation, the project includes staff training and knowledge transfer activities, ensuring that sustainable practices become an integral part of daily operations. By combining digital innovation with practical hospitality expertise, WasteLess helps businesses reduce their environmental footprint while improving resource efficiency and long-term sustainability.

    Key Results

  • Installation of digital food waste monitoring equipment at pilot sites.
  • Establishment of a secure data collection and storage environment.
  • Development of reporting and monitoring procedures for food waste analysis.
  • Training of hospitality staff in the use of the monitoring system.
  • Creation of a practical framework for reducing food waste through data-driven management.
  • WasteLess demonstrates how digital technologies can support more sustainable hospitality operations and contribute to a greener and more resilient tourism sector.
